I am on track to get at highest a 'C' in GCSE in Mathematics. However, all of the rest of my subject grades are predicted to range between B-A*s. After A levels, I would like to do a degree in Politics, Law or both. Would getting a C in Maths restrict what I can do?

You should be fine with a C - although study hard and make sure you do get the C and not less.
For university, Politics sounds like a good choice. You might want to play to your strengths and steer towards the arts and social sciences and away from scientific/technical/analytical subjects.
Have a look on university websites for courses of interest. Each one should specify the entrance criteria, so this should give you a good guide.
